Some weeks are just like that….I’ve had a sick husband and sick kids. We’ve had a week of odd schedules, weird things happening, and in the midst of it all, intermittent cooking of anything remotely interesting. It’s one of those weeks where I’m glad we  have the freezer stash, where I’m glad I have my pantry stash, and I’m sad we have too much fast food nearby. But sometimes, it’s a mom-saver (though..I’d love to rely on it less!)

These are the weeks I find myself really scouring food blogs for inspiration. Something to help me refocus, find great, healthy, easy meals. They can certainly be a time-drain, but having them organized in a reader (google reader is my choice), accessible, and easily bookmarked and saved, blog reading can really be a great inspiration to kick-start your menus! Whether offering great inspiration on being organized in your kitchen, basic meal preparation, or over-the-top company food, blogs can be like having a world of cookbooks at your fingertips.

So, from my blog reading this week, here are some of the things that I saved for our kitchen:

Tuscan Lemon Chicken from Finding Joy in My Kitchen. This is an easy, quick get it read the night before main dish that I can throw on my grill pan or indoor grill and have something ready in a jiffy!

Roasted Tomato Sauce with Garlic from Real Mom Kitchen – this is for Connor..our pasta fiend. We plan on doing it with cherry/grape tomatoes

Caramel Oat Squares from Cutting Edge of Ordinary – Fall is my favorite time of year, and some food combinations just scream fall, and this is one of my favorites! I can’t wait to try these out!

Large Batch Pancake Mix from Dine & Dish. Sometimes, recipes need new formulas when you’re doing them in bulk. You can’t always just 2x or 3x a recipe because it doesn’t always turn out exactly right. So having this handy large batch mix (will be altered to include whole wheat flour for our family) will be helpful on pancake batch cooking days.

Savory Feta and Tomato Crostata – though I plan on converting this to something for baguette coins instead of a pie-like dish.

These are just a few of my favorites as I surfed this week…and can’t wait to try them out!
