What We Ate This Week – March 12-19

This one should be entitled “What We Will Eat” as it’s my effort to get back on a meal plan. I’ve been lax in doing on the last month, and it’s shown in how we’ve been eating too many made up meals, etc., because of my lack of planning and inability to be flexible when our schedules didn’t quite mesh. So I’m doubling the effort. Menu Plan this week, and I’ll report on it next week with the new plan, as well.
SUNDAY
- Breakfast – Daddy Breakfast – cheese and egg fritatta, sausage, hashbrowns
- Lunch – usually skip for early supper
- Supper – Tacos
MONDAY
- Breakfast – cereal (scored a whopper of a deal on breakfast cereal which we rarely have, so it’s a free for all!), strawberries & grapes
- Lunch -
- Supper – fish, quinoa cakes (recipe tomorrow) and salad
TUESDAY
- Breakfast – blueberry smoothie and blueberry muffin (dehydrating some soon to be out of date blueberries and eating up the rest)
- Lunch – sandwiches, hummus, carrots
- Supper – lasagna soup, salad, garlic bread
WEDNESDAY
- Breakfast - blueberry banana smoothies and blueberry muffin (will freeze the rest)
- Lunch – sandwiches, hummus, veg sticks
- Supper – chicken breasts, baked mac-n-cheese, green beans
THURSDAY
- Breakfast – cereal, fruit
- Lunch – ham and cheese rollups, veggie sticks, hummus
- Supper – whatever needs to come out of the freezer – need to clean it on Monday afternoon
FRIDAY
- Breakfast – PB&J smoothies & toast with peanut butter & bananas
- Lunch – leftovers
- Supper – out
SATURDAY
- Breakfast – smoothies and banana nut bread toast
- Lunch – sandwiches, chips, veg sticks
- Supper – corned beef, boxty wuth spinach, Irish soda bread, salad
Our new food this week will actually be another application for an old favorite – quinoa. I’m doing a quinoa cake test tonight and will report back to you tomorrow with the results. Think potato pancake or salmon pattie, but with quinoa and cheese

We’re having fish too tonight. I’m poaching some tilapia & making shredded carrot salad to go with it.
Loved all the menu! I’ll definitely try some of these myself
